I am involved in teaching in the areas of Food Science and taught courses including undergraduates in Food Science and Food Science and Nutrition, and postgraduates in Food Production Management, in addition to a range of short courses for industry and other researchers.

Current Research

My research involves understanding physical and chemical product-consumer interactions at the macromolecular level, with specific interest on the effect of flavour ingredients on mucosal surfaces. Two major application areas include:

1) Release of flavour compounds through understanding ingredient-mucus interactions

2) Identifying interactions which have an adverse effect on mucus structure and function.

I also contribute to other research on Analytical Ultracentrifugation at the NCMH (National Centre for Macromolecular Hydrodynamics) and to research projects in the Flavour Group and the Biomaterials Group within the Department.
