 While studying Sport and Exercise Science and Nutrition at Loughborough University, Elliot conducted research into the effects of caffeine supplementation and carbohydrate ingestion on different exercise modalities.

Elliot’s research at Manchester Metropolitan University, in affiliation with the Future Food Beacon, is focused on the objective assessment of fruit and vegetable intake via dietary biomarkers. This has resulted in a total fruit and vegetable intake prediction model for use in nutritional epidemiology. This model can be used to identify fruit and vegetable targets for biomarker discovery using metabolomic techniques.
