Marcelo is a Food Engineer from State University of Campinas (Brazil), with a Masters in Food Science from the University of Reading (UK) and a Ph.D. in Food Science from the State University of Campinas-UNICAMP/University of California, Davis. He is working on the application of high-pressure technologies on the extraction of functional products from plant material and modification of plant based proteins.
Marcelo has published more than 150 peer-reviewed papers in high impact journals and 200 abstracts in annals. He has mentored 25 MSc students and 16 PhD theses. He has also worked in the food industry on quality assurance and product development for companies such as Nestle, Ingredion, Danisco and Corn Products. Marcelo has won several scientific prizes, including the Brazilian Best Food Science PhD thesis in 2013 and 2017.
