Sophie Lester, a first year PhD student at the University’s Division of Food Sciences, has been awarded one of six prestigious Giract Flavour Research Bursaries. Sophie, who is part of Dr Ian Fisk’s Flavour Research Group, is working with Danone Nutricia Research to explore how foods and essential supplements can be redesigned to make them more palatable for older people.
When awarding the prize, the Giract panel commented “old people require higher protein intakes to maintain their health but acceptance of these foods is low with poor flavour hypothesised as a key cause. Flavouring high protein foods is an under-researched area and the project seeks to understand the interaction between flavour compounds and high protein foods”.
The Giract bursaries are designed to promote innovative flavor research amongst PhD candidates across European universities and research institutes, and are highly competitive. Sophie’s bursary will enable her to add new insight to her innovative project by attending international conferences and visiting sponsor company laboratories.
