Menus of Change

Menus of Change principles_JUN23

  • Our campuses offer healthy, sustainable food for our staff, students and visitors.

  • We are committed to providing food choices that are good for you and the planet, with diverse menus and many vegetarian and vegan options. We also work with local and global suppliers to reduce the carbon footprint of our food operations.

  • To help with this commitment, we are using Menus of Change (MoC), an initiative launched in 2012 by The Culinary Institute of America (CIA) and Harvard T.H. Chan School of Public Health.
  • It consists of 24 principles that focuses on health and nutrition, sustainability, and social responsibility.
  • The principles are broken down into two sections:
    • Menu concepts and general operations
    • Food and ingredients
  • We have started to incorporate these principles into our catered accomodation.
