Research microbial food safety in the Nottingham BBSRC DTP

Microbial Food Safety specialises in the production, transportation, handling, preparation, storage and consumption of food in ways that prevent food-borne illness. Researchers will focus on microorganisms causing illness in humans via contamination of food sources such as Salmonella and Campylobacter. Research also includes study into fungal contamination of foods with mycotoxins, the processing of food to delay growth of microbial components and microbial safety relating to specific diets.
